It is a chicken meat dish made from an Indian inspired creamy curry sauce. As well as having coronation chicken sandwiches you could have it in a wrap. Alternatively you could have the coronation chicken with salad or on a jacket potato. Then there\u2019s the option to have it with rice or Bombay potatoes. Plus as coronation chicken contains apricots and\/or sultanas it is also a good way to get fruit into the diet!<\/p>\n\n\n\n<p>Once made it can be stored in the fridge for 2\/3 days or frozen for a later date (up to 2 months). If you do freeze it then please make sure it is defrosted thoroughly before consumption, and give it a good stir.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to Make Healthy Homemade Coronation Chicken<\/h2>\n\n\n\n<p>This Coronation Chicken recipe is one adapted from Liana\u2019s Kitchen (<a href=\"https:\/\/lianaskitchen.co.uk\/coronation-chicken-recipe\/\" target=\"_blank\" rel=\"noopener\" title=\"\">see here for the original<\/a>). There\u2019s also a wealth of other recipe ideas so please do check out that blog!<\/p>\n\n\n\n<p>On that post it is stated that you can use the recipe to make use of leftover chicken. For example instead of the Cr\u00e8me Fraiche and Greek Yoghurt you can use the equivalent amount of mayonnaise.<\/p>\n\n\n\n<ul><li>3 Chicken Breasts<\/li><li>50% Less Fat Cr\u00e8me Fraiche 300ml<\/li><li>Greek Yoghurt 150g<\/li><li>2 teaspoons of mild curry powder<\/li><li>Ground cinnamon (1 teaspoon)<\/li><li> Mango chutney (1 tablespoon)<\/li><li> Lemon juice (1 tablespoon)<\/li><li>Chopped apricots 140g (optional and\/or sultanas)<\/li><li>Salt<\/li><li>Pepper<\/li><li>Optional chopped fresh coriander<\/li><li>Bay leaves (optional)<\/li><li>Peppercorns (optional)<\/li><li>Water (to poach the chicken breasts)<\/li><\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"750\" src=\"https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/sauce-ingredeints.jpg?resize=1000%2C750&#038;ssl=1\" alt=\"some of the ingredients for coronation chicken\" class=\"wp-image-31270\" srcset=\"https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/sauce-ingredeints.jpg?w=1000&amp;ssl=1 1000w, https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/sauce-ingredeints.jpg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/sauce-ingredeints.jpg?resize=768%2C576&amp;ssl=1 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n<h3 class=\"wp-block-heading\">Equipment<\/h3>\n\n\n\n<p>This recipe is so simple that if your chicken is already cooked you will actually only need two things &#8211; a bowl and spoon!!<\/p>\n\n\n\n<ul><li>Pan (if poaching the chicken)<\/li><li>Bowl<\/li><li>Spoon<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Method<\/h3>\n\n\n\n<p>The Liana\u2019s Kitchen recipe recommends poaching the chicken which I had never done before! They were right though it turned out delicious!<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Poaching the Chicken Breasts<\/h4>\n\n\n\n<ul><li>Simply place your chicken breasts in a pan with optional bay leaves and peppercorns.<\/li><li>Then add water to cover the chicken breasts with 1 or 2 inches to spare.<\/li><li>Next there is the option to gently season the water with salt and pepper.<\/li><li>Bring to the boil and reduce the heat &#8211; simmering for 15-20 minutes or until cooked.<\/li><li>Turn off the heat but leave the chicken breasts in the water allowing to cool down.<\/li><li>Once cooled down then drain it from the liquid. Finally it can be shredded or diced before adding to the coronation chicken sauce.<\/li><li>Note the sauce can be made whilst the chicken breasts are cooling.<\/li><\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"750\" src=\"https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/poached-chicken-breast.jpg?resize=1000%2C750&#038;ssl=1\" alt=\"poaching chicken breasts\" class=\"wp-image-31269\" srcset=\"https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/poached-chicken-breast.jpg?w=1000&amp;ssl=1 1000w, https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/poached-chicken-breast.jpg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/pinkoddy.co.uk\/wp-content\/uploads\/2023\/04\/poached-chicken-breast.jpg?resize=768%2C576&amp;ssl=1 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" data-recalc-dims=\"1\" \/><\/figure><\/div>\n\n\n<h4 class=\"wp-block-heading\">Making the Coronation Chicken Sauce<\/h4>\n\n\n\n<p>It is really easy to make Coronation Chicken sauce &#8211; simply mix in your bowl the 300ml of Cr\u00e8me Fraiche with the 150g of Greek Yoghurt. Add in your 2 teaspoons of mild curry powder and 1 teaspoon ground cinnamon. Mix this together until well combined.<\/p>\n\n\n\n<p>You may want to play around with the amount of curry powder and cinnamon because even these small amounts our son found it was too cinnamon heavy. Alternatively you can also use curry paste.<\/p>\n\n\n\n<p>Next you want to stir in 1 tablespoon of mango chutney, 1 tablespoon of lemon juice and any salt and pepper to season.<\/p>\n\n\n\n<p>This is then when you will add your cooked chicken. Mix until it is well combined.<\/p>\n\n\n\n<p>Here is where you have the option to add apricots and\/or sultanas.
