Stuffed Garlic and Spinach Mushrooms
Clean and remove the stalks of 8 large flat mushrooms. Gently grill, turning after 5 minutes, then cook for another 5 minutes or until they start to weep.
Peel and crush 4 garlic cloves, cut 3 large tomatoes into 8 slices and grate 60z mozzarella.
In a pan place the garlic with 11oz baby spinach and stir fry for 5 minutes or until just wilted. Add a pinch of nutmeg and season well with salt and pepper.
Top the mushrooms with the spinach mixture. Place a tomato slice over each one and sprinkle with the mozzarella. Place under a hot grill for 3 minutes or until bubbling.
